Food52 Genius Recipe #25 Onion Carbonara

 

If you're looking for a low carb version of the classic Italian pasta dish, spaghetti carbonara, using onions as a noodle substitute may be right up your alley. This onion version is an incredibly easy dish to make and takes very little extra work compared to the carb heavy version with pasta. Aside from making the sauce, the only preparation is slicing and blanching the onions in a steamer basket. In 5-10 minutes, the onions lose their sharp bite and soften to the consistency of a cooked noodle. I could see this being a great quick weeknight dinner.

I was rather skeptical that this wasn't going to turn out that great and assumed that Christine wouldn't appreciate the amount of onion. Because of that, I made our usual amount of pasta just in case and so the kids could eat something similar to us. I kept the sauce separate and just dressed one bowl of onions to try. As expected, Christine wasn't a fan and after a few bites I wasn't impressed to finish the bowl. The sauce was killer so my forward thinking saved the meal. I will definitely use the sauce portion of the recipe in the future but don't see myself subbing onions for delicious carbs.
